Turkey shephard's pie

Browned ground meat.  Veggies.  Topped with a big pile of mashed potatoes.  What's not to love? I almost never make it the same way twice (what pureed vegetables can I hide in there? the kids will never know!).  This is my current favorite version.




  • 20 oz package of ground turkey
  • 1 medium onion, diced
  • 2 carrots, sliced thinly (I'm going to try cubed sweet potato or butternut squash next time)
  • 1 celery stalk, sliced thinly
  • Sliced mushrooms
  • Some frozen or canned green beans (or peas, or corn or whatever you like)
  • 6 medium potatoes
  • 2 Tblsp Earth's Balance
  • Salt, to taste
  • 1/4 cup Silk (next time I may try Tofutti sour cream)
  • Ketchup
  • Worcestershire Sauce
  • 1 egg, stirred


How to

  1. Boil potatoes in whatever you like to boil your potatoes in.
  2. In a large skillet, saute onions until translucent.  Add turkey and saute until just cooked through.
  3. In a separate pan, saute carrots, celery and mushrooms and whatever other semi-cooked veggies you are using.
  4. Mash the potatoes with the butter substitute and milk substitute and salt
  5. Layer veggies over the turkey.  Pour ketchup and sprinkle Worcestershire sauce over the mixture.  Layer mashed potatoes on top.  Brush egg wash over the top and bake or broil until it looks golden.
