Mother's Day Brunch

The prospect of going to a fancy Mother's Day buffet with extended family this year was utterly depressing because I knew I would be face-to-face with tables full of favorite foods I couldn't eat, while everyone else went back for seconds and thirds.  Instead, I invited my sister's family to our house and cooked up a brunch that left no one feeling deprived. Well, no one complained, anyway -- I don't really know if they felt deprived of the buffet extravaganza experience -- but they seemed pretty happy and I know I was thrilled.

On the Menu

 

  • Egg Tart with Smoked Salmon & Leeks in an almond flour herb crust (from The Almond Flour Cookbook by Elana Amsterdam)
  • A few regular quiches (one with feta, spinach & tomato, and one with cheddar and broccoli)
  • Zucchini, pecan and currant muffins (from The Almond Flour Cookbook by Elana Amsterdam)
  • Fruit salad (with mango, blackberries, strawberries, blueberries, raspberries, fresh mandarin oranges and watermelon)
  • Simple salad
  • Bacon & sausage
  • Store bought meringues
