Adventures with Lentils

On a recent trip to the health food store, I was inspired to buy French (Puy) lentils but wasn't sure what I would do with them.  I also know my husband and kids are not fans of lentils so I wasn't expecting to share.

I started by making a big pot of lentils, cooked with a diced onion and carrot, a bay leaf, some chicken boullion (actually, it was "Low Sodium Better than Boullion"), some fresh thyme, and pepper. I also threw in some chopped turkey bacon.

 

Meal #1

 

Lentils over a wild rice blend with caramelized onions, served with steamed kale

 

Meal #2

 

Lentils and rice cold over mixed salad greens (tossed with white balsamic vinegar and EVO)

 

Meal #3


Lentils over mixed salad greens (same dressing) with leftover cold grilled marinated eggplant, tomatoes, kalamata olives

 

Meal #4

 

Lentils over the mixed salad greens (same dressing) with diced leftover cold grilled chicken & sundried tomato sausage, cold corn cut off the cob and avocado
