I was on my way home to let out our puppy for a bit and to take a quick lunch break yesterday, but had no ideas. Ravenous. Arguably hungrier than the pooch, if that's possible. Didn't want to take too long but wanted something warm and filling and utterly nutritious. Took a mental inventory of the fridge and cupboards. Wanted something new.
Without so much as consulting a website or cookbook, I threw caution to the wind (I'm wild!) and cooked up some kasha (complete with the steps involving stirring egg into the dry buckwheat and pan cooking it until the egg dries) with chicken broth. I diced and threw in a few handfuls of butternut squash to cook with the kasha, drained a can of chickpeas and tossed in half of that near the end with some frozen peas. Meanwhile, since I'd already dirtied a second pan (at LUNCHTIME!?!?!), I decided to quick brown some vidalia onion. S&P. Twenty minutes after walking in the house, my food was on the table. And, you know what? It was delicious, I have leftovers for a few more lunches, and I will happily make it again. As Emeril says, "Bam!"
