Spontaneous lunch

I was on my way home to let out our puppy for a bit and to take a quick lunch break yesterday, but had no ideas. Ravenous.  Arguably hungrier than the pooch, if that's possible.  Didn't want to take too long but wanted something warm and filling and utterly nutritious.  Took a mental inventory of the fridge and cupboards.  Wanted something new.

4th of July

Almost every 4th of July, we have a family gathering to celebrate my mother in law's birthday (conveniently timed to a national holiday!).  Usually we go to the beach, but this year, the family came to our house.  I wanted to make a meal that was celebratory and fitting of the summer holiday, that involved very little hands-on work while our guests were here, and that allowed me to eat everything while not leaving the guest of honor feeling deprived.

Minestrone-like Chicken Soup

Cinnamon Doughnut Muffins

This recipe appeared in my email inbox today and it sounded so good that I made it for an afternoon tea visit with a dear friend.  They came out great!  Even my kids gobbled them up.

Mother's Day Brunch

The prospect of going to a fancy Mother's Day buffet with extended family this year was utterly depressing because I knew I would be face-to-face with tables full of favorite foods I couldn't eat, while everyone else went back for seconds and thirds.  Instead, I invited my sister's family to our house and cooked up a brunch that left no one feeling deprived. Well, no one complained, anyway -- I don't really know if they felt deprived of the buffet extravaganza experience -- but they seemed pretty happy and I know I was thrilled.

Tamale pie

I love tamales.  I love tamale pie.  I grew up in New Mexico, so that's my comfort food.  (Well, Jewish food is comfort food for me too, but that's another genre to tackle.)  I got really excited by the idea of making tamale pie, but then while it was cooking, it smelled a little weird and so I dropped my expectations way down.  Thankfully, it was delicious!!!

Steamed new potatoes, tomatoes, black olives, avocado, cucumber, lettuce, drizzled with lemon juice and olive oil. Topped with baked GF chicken tenders from Bell & Evans.

Almond Butter Chocolate Chip Baked Oatmeal

Thanks to my friend Caryn, I tried this recipe and I'm enjoying a bite as I type.  They came out great!  I found a brand of dairy-free semi-sweet chocolate chips and I used coconut milk.  Fantastic!

The challenge: dinner for company

 

My pescatarian cousins spent the night at our house last night with their 3 and 7 year-old sons.  I wanted to prepare a single dinner and prove to myself that I could make a kid-friendly, adult-interesting, satisfying meal without meat, dairy or gluten. Also, my cousin has a major sweet-tooth but is health-conscious and has high cholesterol. And I'm not crazy about fish but my husband is usually disappointed by vegetarian meals. Bring it.

THD Post-Op

Today is Thursday.  On Tuesday I had surgery to fix my bleeding arse -- I mean, my hemorrhoids.  There are really just too many potential jokes about this sort of surgery, but of course there's a serious side, too.

Cilantro lime grilled chicken

I think the trick to making this dish really flavorful was a long marinade time and thorough pounding of the chicken breast which made for quick and uniform grilling.  Another recipe which got the thumbs up from my kids.  When I'm trying a new recipe, I tend to make a plain or "safe" version for them, and then wait for them to ask to try what's on my plate (ah, the allure of being on someone else's plate).  Or I bribe them to try it if they don't ask... whatever works.  I think the fact that they see me getting out the camera and arranging things nicely on the plate makes them really curious and more open to trying new flavors.

Chicken sausage, kale & potato stir fry

I love variations of sausage, greens and potatoes in a stir fry.  This version worked quite nicely and was even pretty!

Potato, ham & green onion croquettes

I had some leftover mashed potatoes and fully intended to do something delicious and decadent with them.  This fit the bill, although I'd like to keep experimenting with the coating. I am pleased to say the croquettes passed the kid-taste-test.

Avocado, clementine, cucumber & cilantro

This salad came out so pretty and tasty!  I had it with leftovers from yesterday's delicious beef stew. If I'd had pepitas or pomegranate seeds, I would have added those too.  This beautiful wooden bowl belonged to my great grandmother.  I treasure it and thank my mother for handing it down to me.

Rice pudding with butternut squash

I've become addicted to rice pudding in the past few months. I figure it's less harmful than smoking or drugs, right? I think it's the rich creaminess that is so satisfying. (Have I mentioned how much I miss cheese and butter?)  Plus, if I add vegetables, dessert becomes a justifiable main dish. I eat rice pudding for breakfast. And dessert. And snacks. And anytime I can. My only complaint is that it looks fairly unappetizing because the cinnamon and the soy milk mix up to a rather yucky color.  Suggestions are welcome.

Beef stew in a slow cooker

On a cold day, I can't think of anything more warming and satisfying than a bowl of hearty beef stew.  Butternut squash seems to have a magical effect in this dish. Plus, I froze the leftover wine in popsicle molds, which I find quite comical.

My "go to" list

Sometimes, the thought of finding something to eat that won't upset my system is just so daunting and disheartening that I skip meals completely, which does not square with my overall goal of being healthy, energetic and emotionally stable.  I have a list of easy "go to" foods for when I can't bear the thought of eating, but I know I have to. This list is derivative of an earlier version I came up with years ago for when I was depressed or just couldn't be bothered with eating.  Of course, that list was FULL of things I can't eat now, so here's my work-in-progress new list:

Turkey shephard's pie

Browned ground meat.  Veggies.  Topped with a big pile of mashed potatoes.  What's not to love? I almost never make it the same way twice (what pureed vegetables can I hide in there? the kids will never know!).  This is my current favorite version.

Morning glory muffins

I hesitate calling this a recipe because I really just threw stuff from the refrigerator and cupboard together and I'm not even sure I could recreate it, but I wanted something just a little sweet for breakfast and was feeling nostalgic for Atticus Cafe at Yale. They have the most amazing morning glory muffins but, alas, I can't eat them anymore.
